very well made high carbon stainless for this price cannot be beat
My wife got me this set for christmas a couple years back and I absolutely love them. If you do the research you would know there are 3 kinds of materials used for most knives. Carbon steel which is soft, cheap, does not hold a sharp edge for long, and rusts. Stainless steel which is hard and keeps a sharp edge for a while but, is really hard to sharpen. The best of both is high carbon stainless steel which gives you the best of both worlds, which is what this set is made of.
The 3 big knifes are amazing. The spine (back edge) is rounded for comfort. The bolster (where the blade meets the handle) is rounded and extremely comfortable to use for long periods. Also the bolster / heel design eliminates the chance of cutting yourself from a sharp edge at the base of the blade. The balance is really good as well. These are really comfortable knives to use for extended periods of time. If you do not know knife skills please look them up and use a pinch grip for slicing...
